In the United States, Fat Tuesday, also known as Shrove Tuesday, Mardi Gras, and Pączki Day, is the day to indulge before Lent begins. However, Fat Thursday (the last Thursday before Lent) heralds the winding down of Carnival season and that's when fried foods such as pączki are eaten with abandon in Poland, where it's known as Tłusty Czwartek.
Description. PÄ…czki are deep-fried pieces of dough shaped into spheres and filled with confiture or other sweet filling. PÄ…czki are usually covered with powdered sugar, icing, glaze or bits of dried orange zest.A small amount of grain alcohol (traditionally rectified spirit) is added to the dough before cooking; as it evaporates, it prevents the absorption of oil deep into the dough.
Traditionally, pÄ…czki are fried in hot fat, packing quite a wallop in the calorie department. This baked version removes some of the guilt from indulging. When dusted with granulated or confectioners' sugar, they are virtually indistinguishable from fried paczki.
PÄ…czki are fried, sugar-dusted fluffs of pastry, with a golden brown color on both sides with a light ring around the middle. These yeast-risen Polish doughnuts are deep fried and covered with powdered sugar or fried orange zest and filled with various jams and jellies. How is it pronounced? While there are slight variations, the typical North American pronunciation of pÄ…czki is poonch-key ...
My PÄ…czki are proofing as I type. I found a recipe for baked PÄ…czki that I love that works for me because I just can't get the frying right, too greasy, too dark, not cooked through. Can't wait to take a bit and share with my church choir members tonight.
The pÄ…czki turned out very light and fluffy, and so soft. I went less traditional with my filling, freestyling a simple chocolate filling from condensed milk, chocolate chips, a dash of salt and a little vanilla. The whole family loves them! I would definitely recommend this recipe to anyone.
PÄ…czki are essentially donuts, made by frying dough, filling with a variety of fruit or custard fillings, and coated with sugar. Paczki are made from a rich dough containing eggs, fats, sugar, yeast and sometimes milk, so they tend to be a little more rich and dense than a typical donut. Packzi can have a variety of fruit or cream fillings.
This is the recipe I found handwritten in my Polish grandmother's cookbook. I have since found ones almost identical in Polish cuisine cookbooks. I so looked forward as a child to the Sundays that the Catholic church in Wilno, Minnesota sold paczkis after Mass on Sundays. They were the best treat ever. This recipe takes some effort, but they taste just as good.*NOTE....I'm adding this change ...
This is the 'traditional' ponczki made by most Polish Grandmothers, like mine. These take time and patience, but the product is worth it. Preferred, traditional frying method is with lard but oil will work fine.

Prepare dough and let rise: Turn over the dough onto a floured surface and knead for a couple minutes, then place the dough in a bowl that's sprayed with cooking spray. I also like to spray the dough with some cooking spray so that it doesn't dry out. Cover with plastic wrap or a clean kitchen towel and let rise for a couple hours.

EXQUISITE OLD WARSAW PĄCZKI. This is an old recipe modified for those who prefer granulated, active dry yeast to a the more traditional compressed fresh yeast. Beat 12 egg yolks with 1. t. salt at high speed until thick and lemony. Dissolve 2 packets of dry yeast in 1/4 c. 110-degree water.
Paczki, pronounced PUNCH-key, are Polish jelly-filled doughnuts, traditionally served in the weeks just prior to Lent. In Northeast Ohio, these delicious confections can be found in the bakeries of Slavic Village and other Eastern European food stores during the pre-Lenten season (mid-January to mid-March).
Paczki are filled doughnutlike pastries made to be particularly rich. They are often covered with powdered sugar or icing. They are the centerpiece of Fat Tuesday.

The pÄ…czki above are from left to right: fried in lard, baked, air-fried. Here are our thoughts on the three versions. Fried - this was our favorite for taste and texture. There was a light crispness to the outside, and the lard adds another flavor note.

The PÄ…czki needs to still be hot enough that the sugar will partially caramelize and stick to the fried dough easily. Too hot and the sugar just melts. So, hot enough that you can touch them just briefly is a good sign they are ready for the sugar.
PÄ…czki are a specialty pastry reserved for once a year in honor of Fat Tuesday. A traditional Polish doughnut. 2009 March 29, Paul Clemens, "Lean Tuesday", in New York Times‎[1]: Fat Tuesday is our Mardi Gras, a sort of Polish St. Patrick's Day, with Hamtramck in place of the French Quarter and paczki (pronounced POONCH-kee) in place of green beer.··inflection of paczka: genitive singular nominative/accusative/vocative plural
PÄ…czki was one of the first Polish words I ever learned, since it was an annual event in our house when I was a kid. My Nana spoke fluent Polish, but I never really picked up a ton of it. I suppose I was too young, yet I still remember a few useful phrases. Paczki, of course.
In Poland, pączki — which means "little packages" or "doughnuts" — have just a bit of filling to be found as a surprise, which is a little more befitting the name.
