In the United States, Fat Tuesday, also known as Shrove Tuesday, Mardi Gras, and Pączki Day, is the day to indulge before Lent begins.However, Fat Thursday (the last Thursday before Lent) heralds the winding down of Carnival season and that's when fried foods such as pączki are eaten with abandon in Poland, where it's known as Tłusty Czwartek.

Description. Pączki are deep-fried pieces of dough shaped into spheres and filled with confiture or other sweet filling. Pączki are usually covered with powdered sugar, icing, glaze or bits of dried orange zest.A small amount of grain alcohol (traditionally rectified spirit) is added to the dough before cooking; as it evaporates, it prevents the absorption of oil deep into the dough.

Traditionally, pączki are fried in hot fat, packing quite a wallop in the calorie department. This baked version removes some of the guilt from indulging. When dusted with granulated or confectioners' sugar, they are virtually indistinguishable from fried paczki.

My Pączki are proofing as I type. I found a recipe for baked Pączki that I love that works for me because I just can't get the frying right, too greasy, too dark, not cooked through. Can't wait to take a bit and share with my church choir members tonight.

The Pączki needs to still be hot enough that the sugar will partially caramelize and stick to the fried dough easily. Too hot and the sugar just melts. So, hot enough that you can touch them just briefly is a good sign they are ready for the sugar.
